A Delicious Gift
Here's a wonderful recipe to share with special friends and relatives. It will make a delicious gift. Its compliments of one of our local extension leaders who want to remain anonymous. She says it's real easy to prepare because you use the microwave. It's called:
Micro Wave Divinity
2 cups sugar
1/2 cup water
1/4 cup white corn syrup
2 egg whites
1/4 teaspoon Cream of Tartar
1 teaspoon vanilla
1 1/2 cups shopped pecans
Combine the sugar, water, corn syrup in a large Pyrex measuring cup and cook in microwave oven about 3-4 minutes. Stir with wooden spoon until sugar is dissolved. Drop a small amount in a glass of cold water. If the syrup forms softball then you are ready to continue with recipe. Otherwise, cook an additional 3-5 minutes and test again. Beat 2 egg whites until stiff but not dry. Add 1/4 teaspoon Cream of Tartar to egg whites and continue to beat. Add the hot syrup slowly to the egg whites while beating. When all the syrup has been added, add vanilla and nuts and keep beating until the mixture thickens, holds it shape, and begins to lose its gloss. Drop with a teaspoon on to wax paper or a surface coated with cooking spray. Cool and store in an air tight container. Enjoy!
