It has often been said, mostly by breakfast cereal companies, that "breakfast is the most important meal of the day." Okay, I concede.
Last week I had an occasion to visit a local doctor's office and had that old suspicion confirmed. "People who don't eat breakfast tend to be heavier than those who do eat breakfast." What a statement. Here I was skipping breakfast most days or settling for coffee and cheese crackers not realizing that I was doing in my own diet plans.
With the hectic pace of morning at my house, it became necessary for me to begin thinking of ways to have a somewhat healthy breakfast, in a hurry and on the go.
I've come up with a few ideas. You can bet I'll be trying them and I'll give you my reviews when the results are in. Hope you enjoy your breakfast and get off to a good start.
This first recipe is something like a muffin, only healthier and actually a little better tasting that some muffins I've eaten. You can prepare this one evening while preparing dinner and refrigerate for a quick, on-the-go breakfast through the week.
Breakfast Fritatta
6 eggs, well beaten
One-half cup each chopped onion, chopped red or green bell peppers, broccoli
Butter for saut
